We’re trying to do two things in our house: (1) eat healthier and (2) use the food we already have before it goes to waste so we can spend less time at the store. So this was a meal thrown together to satisfy both of those things, and you can easily modify it to whatever you have on hand! Enjoy!

- Preheat oven to 450 degrees
- In a bowl combine olive oil with seasonings of your choice. We used garlic salt, paprika, Italian seasoning, onion powder, salt and pepper. Set aside and let the flavor infused into the oil.
- Cut your veggies. We used zucchini, squash and cherry tomatoes. Once cut, add them to the oil mixture and stir until well coated.
- Add to sheet pan, spread out and top with Parmesan cheese.
- Pat your fish dry. Place on a wire rack pan, brush with olive oil and add desired seasonings. We used the same blend mentioned above for the veggies.
- Top fish with breadcrumbs and Parmesan cheese.
- Place both the veggie and fish trays in oven and cook until done…about 20 mins – or more or less depending on fish size and veggie thickness.
- Cook a microwaveable packet of Seeds of Change brown rice and quinoa in the microwave for 90 seconds according to package directions (we purchased this at Costco).
- Plate and enjoy!
